Why is it useful to think of linear interpolation in the view of linear combination of two functions?

If I understood Kayvon's explanation on the next slide, it's because it can be helpful to be able to do smooth or continuous interpolation between multiple points, as opposed to piecewise, which doesn't provide a continuous derivative.
